Parapanem Association invites you to discover the secrets of Italian cuisine through an immersive experience that engages all your senses. Not just a simple cooking class, but an authentic journey through flavors, traditions, and stories that characterize our gastronomic culture.

What makes our experience unique is our meticulous attention to product quality, all rigorously selected from small local producers, and the care for details that transforms every gesture into a moment of sharing and learning.

Our cooking class takes place on a splendid terrace overlooking the Vatican and the Eternal City, a magical setting where culinary tradition intertwines with Rome's timeless beauty.

The cooking class is structured in four distinct phases, each designed to offer a complete experience that combines the pleasure of taste with cultural enrichment.

Welcome and Tasting Aperitif

Our journey begins with a welcome toast, accompanied by a selection of aperitifs and tastings that tell the story of the territory:

Welcome Drinks
  • Artisanal Prosecco from "Le Querce di Tara" vineyards by Mauro Rinaldi, produced with Trebbiano del Lazio and Malvasia Puntinata grapes, a wine that expresses the minerality and freshness of the Rieti territory.
  • Spritz prepared with the prestigious "Select" Bitter from the Pallini company in Veneto, a classic revisited with more complex and less sweet flavors than the traditional Aperol.
  • High-quality non-alcoholic alternatives such as Chinotto and Aranciata by Lurisia, produced in Sicily with natural aromas and selected fruit.
  • Our fresh infusion prepared with herbs selected by the herbalist, specifically designed to accompany and enhance the flavors of the meal that will follow.
Welcome Tastings
  • A selection of three olive varieties: the delicate Leccino, the intense Gaeta olives, and the sweet Baroile from Puglia, to appreciate the different flavor nuances.
  • Tasting of two superior extra virgin olive oils with naturally leavened bread made with whole wheat flour, to discover the fruity and spicy notes of this fundamental ingredient of Mediterranean cuisine.
  • The traditional "cazzimperio", a typical Roman vegetable crudités to dip in fresh olive oil.
  • The lupini beans (or fusaglie), a typical Roman legume served as an appetizer in traditional taverns.

During this convivial moment, you'll discover the secrets of the Italian aperitivo tradition, pairing techniques, and the history of products that tell the story of the territory and its flavors. An informal but content-rich introduction to the world of Lazio gastronomy.

Fresh Pasta Creation

Our Creations

The heart of the experience is the preparation of two types of fresh pasta, with techniques and recipes that combine tradition and creativity:

First Dough: Water and Flour

You'll create a pasta typical of Central-Southern Italy, using exclusively organic durum wheat flour from Peppe's Mill, a small producer who keeps traditional milling techniques alive.

The pasta will be accompanied by a fresh seasonal sauce, elaborated according to the criteria of Roman tradition but with a creative touch that makes it unique.

Second Dough: Egg Pasta

You'll follow the preparation of a filled egg pasta, using organic eggs from free-range chickens and selected flours.

You'll create a fresh filling using seasonal ingredients, purchased on the same day at the Trionfale Market, the largest covered market in Europe and the most ancient and authentic in Rome.

During the preparation, the rhythm of the class will be punctuated by toasts with selected wines, respecting the Italian tradition that always combines kitchen work with the pleasure of good drinking.

Techniques and Secrets

In this phase you'll learn:

  • The techniques of kneading and working pasta according to Roman tradition
  • The secrets for pasta with perfect consistency
  • How to recognize quality flours and their different uses
  • The importance of seasonal ingredients in Italian cuisine

Lunch or Dinner on the Panoramic Terrace

The Gastronomic Experience

The culminating moment of the experience: tasting the creations prepared together in a unique setting:

The Setting

The tasting takes place on our panoramic terrace with breathtaking views of the Vatican and the Eternal City, in the shade of a veranda that creates an intimate and evocative atmosphere.

Guests can choose whether to actively participate in the final cooking and plating, or relax and be served, enjoying the panorama and the company.

The Tasting

The two fresh pastas prepared will be served accompanied by a selection of local wines carefully chosen by the sommeliers of Vini e Oli Consoli, a small but prestigious wine shop in the neighborhood.

To conclude, a traditional dessert: a tart made with sour cherries (a typical jam from Central Italy) from the artisanal bakery of Monica and Alessio, or artisanal gelato from Giovanni's gelato shop, depending on availability.

To beautifully conclude: a coffee prepared with the classic Italian Moka and homemade limoncello according to tradition.
