The heart of the experience is the preparation of two types of fresh pasta, with techniques and recipes that combine tradition and creativity:
You'll create a pasta typical of Central-Southern Italy, using exclusively organic durum wheat flour from Peppe's Mill, a small producer who keeps traditional milling techniques alive.
The pasta will be accompanied by a fresh seasonal sauce, elaborated according to the criteria of Roman tradition but with a creative touch that makes it unique.
You'll follow the preparation of a filled egg pasta, using organic eggs from free-range chickens and selected flours.
You'll create a fresh filling using seasonal ingredients, purchased on the same day at the Trionfale Market, the largest covered market in Europe and the most ancient and authentic in Rome.
During the preparation, the rhythm of the class will be punctuated by toasts with selected wines, respecting the Italian tradition that always combines kitchen work with the pleasure of good drinking.

The tasting takes place on our panoramic terrace with breathtaking views of the Vatican and the Eternal City, in the shade of a veranda that creates an intimate and evocative atmosphere.

The two fresh pastas prepared will be served accompanied by a selection of local wines carefully chosen by the sommeliers of Vini e Oli Consoli, a small but prestigious wine shop in the neighborhood.
To conclude, a traditional dessert: a tart made with sour cherries (a typical jam from Central Italy) from the artisanal bakery of Monica and Alessio, or artisanal gelato from Giovanni's gelato shop, depending on availability.
To beautifully conclude: a coffee prepared with the classic Italian Moka and homemade limoncello according to tradition.
